Rita Heikenfeld's Caramelized Vidalia Onion Dip
Great for tailgaiting. This is really good with terra or tortilla chips, or crackers. Or how about as a topping for that burger?!
3 large Vidalia or other sweet onions, chopped
2-3 tablespoons butter
1 cup mayonnaise
8 oz sharp shredded cheddar
Tobasco to taste
1-2 teaspoons garlic or more (I like more) to taste
Preheat oven to 375. Saute onions in butter until they are very soft and starting to caramelize, then blend with mayonnaise, cheese, Tobasco and garlic. Pour into casserole and bake 20-25 minutes.
